fix(docker): also override numpy==1.26.4 for robomme image
mani-skill==3.0.0b21 requires numpy<2.0.0 in addition to gymnasium==0.29.1, both conflicting with lerobot's base requirements. numpy 1.26.4 is runtime-compatible with lerobot's usage (no numpy 2.x-only APIs are used in the eval worker or env wrappers).
